This fast-casual chain opened its first New Jersey location in June. The menu repeats the company’s successful formula of “homegrown recipes and big bold flavors,” including gyros, souvlaki platters, and house-made dips melitzanosalata and tirokafteri. Made-to-order fresh feta fries are also a signature. The company told Restaurant News it plans to open at least five more New Jersey restaurants.

Locals Konstantinos Chilias and Andrew Hendricks are behind this new restaurant, which showcases Greek and Italian food and wines. Chilias, who goes by “Chef Dino,” emigrated from Greece in 1996 and joined the restaurant industry soon after, according to a local news site. Hendricks, of Italian descent, has worked in the food and hospitality since he was 16, and the pair have known each other for nearly two decades. Greece and Italy have “a close symbiotic relationship in Europe,” the pair said in a statement.

Estiator readers know kaimaki as the chewy, mastiha-perfumed ice cream. It’s also the playful name of a soaring new wine bar from Michelin- starred chef Nicholas Stefanelli. Located next door to Philotimo, Stefanelli’s splashy Greek restaurant, Kaimaki features wildly original cocktails like Medicane (Kleos Mastiha, Jamaican rum, home- made fassionola, lime, bubbles) and a long list of Greek wines. An edited menu will offer small plates like dolmades and Greek cheeses.
