Founded by three Greek cousins named Nick Tsigaris, this fast-casual franchise opened this Northern California store in April. The franchisee, Victor Zeidan, told a local newspaper that he’s “Greek at heart” and pursued Nick the Greek after a yearlong sojourn in Greece. “It tastes so much like the ones I had in Athens, Santorini, and Mykonos,” Zeidan said about tasting Nick the Greek. “So that’s what surprised me, how authentic the flavors are to actual Greek food.”

Thessaloniki native Evangelos Myronis is the executive chef at this bright new spot, which bills itself as a “traditional Greek restaurant with modern sensibility.” The menu features familiar favorites like saganaki, avgolemono, and xtipiti alongside lamb chops, whole fish, and souvlaki. According to the Atlas Obscura travel site, Egeo is home to Greece’s humid Petaloudes Valley, more commonly known as the Valley of the Butterflies.

“We want to create the feeling that you are in the Greek backyard where everything is made on the grill,” says Tom Christopoulos, who is operating the restaurant with wife Karen and their three sons, Costa, Andrew, and Tommie. The all-day spot features an “all-American diner menu” with Greek touches, Eater reported. Christopoulos comes from a long line of restaurateurs; grandfather Gus had hot dog stands and drive-ins in Chicago, and Andy, another grandfather, ran California supper clubs until the 1960s.
